"Letting a wine breathe" is defined as opening the bottle awhile before serving, under the theory that exposing it to air will make it more enjoyable to drink. In fact, most wines don't really benefit from this practice, and some might actually suffer. Exposure to air is useful only with immature wines that might benefit from aging. When you consume young wines of this type, before they're ready to drink, you might find they show very little of their potential flavor or aroma. They may taste "tannic" or
astringent, a
distinctive feature of young reds that usually mellow with age. Wines
like this may mellow a bit if you expose them to the air for a couple of
hours, or even overnight, before serving. If you're going to let a wine "breathe," don't just pull out the cork. That exposes only a tiny portion of the wine in the bottle neck to the outside air. Pour the entire bottle into a clean pitcher or decanter. But, again, there's really no benefit to "breathing" a wine that doesn't need aging. Most whites and many reds are fruity and ready to go, just as soon as the bottle is opened. And you should never allow an older, fully mature wine to breathe, because it may be fragile with age and give up its taste quickly after being poured.
